It possesses an intense, pungent-spicy aroma and a bitter taste. It is best suited for Indian and Asian cuisine, for meats, and as a sprinkle on sandwiches. Its aroma and taste resemble sweet mustard or ginger, yet it boasts a more intense aroma and a stronger, sharper, peppery flavour. Galangal can be used as a substitute for pepper or as an alternative to curry. It pairs wonderfully with beef, fish, potato soup, pea and bean soup, and rich sauces.
