Organic shiitake mushrooms, otherwise known as Japanese sclerites, are grown on the dead logs of deciduous trees. They are increasingly popular for their valuable nutritional properties. They are especially valued in Eastern cuisine. We recommend that shiitake mushrooms undergo a short heat treatment (about 5 minutes), otherwise they harden. Depending on the use (e.g. for sauces), it is worth soaking them for about 30 minutes before use.
